This dish is perfect for quick healthy lunch. It takes only a few minutes to assemble and virtually no prep time.
Vegan Grilled Chicken Salad with Balsamic Vinaigrette
- 2 Cups Salad Greens
- 1/2 Pack Beyond Meat Grilled Chicken Strips
- 3/4 Cups Extra Virgin Olive Oil
- 1/4 Balsamic Vinegar
- 1/2 tsp Sea Salt
- 1/2 tsp Cracked Pepper
- 2 tbsp Lemon Juice
- 1 tbsp Chopped Garlic
- 1 tsp Mustard (optional)
This easy recipe requires only two simple steps.
- First mix all the vinaigrette ingredients in a small bowl.
- Assemble the salad. Salad greens, Chicken, then Dressing
Note: I like my dressing with a little zing! Reduce the vinegar and/or lemon juice for less acididy. You will have more than enough dressing. You can store the rest in the refrigerator for later in a salad dressing container or mason jar. Shake well before each future use.
