Even before I went vegan, I was a fan of plant based milk. At a young age, I often preferred soy milk in place of traditional milk products. Once I discovered vanilla almond milk, I was hooked.
Being that my boyfriend and I are both vegan now, we go through quite a bit of plant based milks. Although almond milk has long been my favorite, we’ve also tried hazelnut milk, rice milk, coconut milk, and homemade hemp milk. Recently, we’ve also been keeping cashew milk on hand.
When the opportunity came to try pistachio milk, I was immediately intrigued. I’d never heard of such a thing, but the idea sounded absolutely delicious. I was lucky enough to snag a freshly made sample from The Lait Co. Their homemade natural pistachio milk contains only three ingredients. It is comprised of raw pistachios, water, and dates. There are no preservatives or artificial ingredients. Another perk is that pistachios are a nutritional powerhouse with several potential health benefits.
I was in love at first sip. You would never guess there was such a simple list of ingredients, due to the massive amount of flavor. It tastes rich, creamy, and indulgent, yet it is still subtle enough that I imagine it tastes great in a variety of recipes. Pistachios produce such a pleasantly nutty milk that I’m amazed pistachio milk isn’t more common.
