Meatless Monday- Quick and Easy Avocado Tacos

I’ve been trying to think of ways to decrease my processed food intake. One way is to substitute processed soy products and meat substitutes with fresh produce. When taco night came around, I decided to use avocado instead of our usual soy grounds. Avocados are full of healthy fat and are packed with protein. They are also delicious and filling. They are the star of this simple taco dish. This light meal takes minimal time but has maximum flavor.

Quick and Easy Avocado Tacos

Ingredients:

  • 4 Corn Tortillas
  • 2 Ripe Avocados
  • 2 tbsp Lime Juice
  • 1 tsp Taco Seasoning
  • 1 Can Refried Beans
  • 4 tbsp Salsa

Instructions:

  1. Slice the avocados in half and remove the pits
  2. Sprinkle 1/2 tbsp lime juice and 1/4 tsp taco seasoning on each half
  3. Warm the tortillas and the beans
  4. Spread 1-2 spoons of beans in each tortilla
  5. Scoop 1/2 of the seasoned avocado in each taco shell over the beans
  6. Top with 1 tbsp of salsa
